The easiest apple “pie” ever

I stumbled upon this recipe a few weeks ago and had to give it a try with my own twist on it of course. It seemed so simple and I was curious if it would taste as yummy as a homemade apple pie with your traditional crust…and it sure did! I made two big ones and sent some home with all of our family and friends & they loved it too, this recipe will be sure to find a home in my growing recipe book to pass down one day to my kids. Bake in stoneware if you can, it makes all the difference!
The Ingredients
2 Eggs
1/2 Cup Coconut Oil
6 Medium Organic Gala or Fuji Apples

2 Cups Flour of your choice
1 Heaping Tablespoon of Cinnamon
1 3/4 Cups Sugar or Sugar Alternative
2 Teaspoons Baking Soda

The Recipe
Preheat oven to 350

In a bowl mix together your eggs, cinnamon, sugar and oil
Peel and slice your apples and add them to the mixture coating as you go
Mix the baking soda and flour together and add to the bowl of ingredients
MIx well with a fork until all of the flour is absorbed
Pour into your bakeware of choice and sprinkle with cinnamon 
Bake for approximately 55 minutes
